Yes, MATLAB can be used for simulating RFID localization. It might take a lot of work, though.

MATLAB is a general purpose programming language. Anything finite and deterministic that can be programmed in any other finite deterministic computer language can be programmed in MATLAB, memory permitting. So develop your algorithm and start coding.

What will the (simulated) inputs be like? What kind of mathematical transformations will you be performing on them?

I'm going to test different algorithms (multilateration, Bayesian interference and angulation) for the localization of RFID and estimate the speed of moving objects. Input to be used (Simulated) is a RFID tag .. with a specific algorithm, the RFID reader detects the position of the tag.
