3 parameter plotting and colourmap

I have three parameters namely:

1. omega: a frequency vector with size (1,3841).
2. rpm_mean: a rpm vector with size(1,100).
3. linear spectrum amplitudes: a matrix with spectrum values with size (3841,100).

I need to make a plot linear spectrum v/s spectrum for every value of rpm on y-axis. and then make a colourmap out of it.
