Image processing project using grayscale, filtering, binary...

I have to complete the image processing project. The project is about detect the defect on the surface of apple. I already done the several method which are grayscale, filtering and binary. What is the next step? The result that I want to display is whether the apple 'have defect' or 'no defect'. I hope anyone can help me..
