Reading data from a load cell

I want to read and process data from a load cell. I know a little about the data acquisition toolbox in Matlab, but I would like to understand the steps that are required to actually do the reading (acquisition card, signal conditioning, etc.) and how to interface everything to Matlab for data processing.

Which MATLAB version are you using, on which OS? Are you using a 32 bit MATLAB or a 64 bit MATLAB? Which data acquisition card are you using?
There are two completely different ways of proceeding; the newer way is mostly for National Instruments cards.

Thank you for your answer! Actually, I am free of choosing whatever configuration I want. I think the OS will be Windows anyway. As regards the acquisition card, I am also free to choose that. Basically, I have to set up the whole system from scratch, but I have never done something like this, so it would be great to have some suggestion on how to proceed.
