There several tutorials that illustrate how to make a graph of f(x,y), here is simple example :
[x,y]=meshgrid(-1:0.1:1);
z=sqrt(1+x.^2+y.^2);
surf(x,y,abs(z))

remove the absolute value >>surf(x,y,z). start by learning simple tutorials.
