How do i overwrite data in excel from a gui?

I have to create a GUI for a project in school and i need to know how i can take a handles string and use it to rewrite the data for an excel spreadsheet. My project is an inventory system and i need to be able to update the excel spreadsheet from the GUI such as if someone makes a purchase or I update stock.
