Using Renesas RX62T with MATLAB/Simulink

I am quite new to MATLAB and so my knowledge and experience is little, however....
I have a line following, 4 wheel, autonomous car. It is self driven and is designed to follow white lines on a black surface (similar to arduino 2 wheeled line follower. It picks up sensor readings via IR/phototransistor sensors to determine whether the car is following the line.
I am looking into connecting the external hardware (Renesas rx62t microcontroller) to MATLAB/Simulink with the hope that I could collect real time data of the sensor readings and real time values of the program's code. Plot a graph with it and tune/monitor the controller parameters.
intially i was hoping to use matlab to auto-tune the car's PID controller, but i then realised that it may be more complicated than that.
anyways, would anyone know how to connect a renesas rx62t microcontroller to MATLAB/Simulink (or if there are other methods I can use to collect real time data from the RX62t?
