Get values from .mat file and plot

Hello! I'm reading values from force sensors, using simulink, using different weights and different sensors. I'm saving each line of values I'm getting from a weight in a single file .mat. Now I need to get the operating curve from each sensor, englobing all weights for each sensor, and I want to make that my writing code in a single file. Can you help me do that?
