How to generate MATLAB MEX functions from Simulink models. Also please let me know what tools are required for this.

You need Simulink Coder, which also requires MATLAB Coder.
Embedded Coder is recommended for use with Simulink coder, and Fixed Point Designer is also recommended, but neither of those are likely to be of interest to you in generating MEX files.
