How to extract color image alone from the picture by removing background and get mean RGB value of color image alone excluding the background

I am doing sorting of fruit based on maturity color by using image processing so I need to extract image alone from the picture by removing background and I should take mean RGB value of that image images and I have seen somewhere that we should use some logic code for this kind of problem but I am new to this software so please someone help me to get that value.
