How to run simulations in Matlab?

Hi!

I wish to learn how to run simulations in Matlab. Lets say I have a block diagram in simulink representing a quadrotor. I run the simulation and then I wish to work with the results in Matlab.

So from what I have read I could use a "Workspace" block instead of a scope block and get the data saved in a variable in Matlab. WHat do I do then?

Is there any documentation explaining the basics of such simulations from scratch?
