Is there a way of using the Simulink coder to convert a simulink model to Fortran instead of C++?

No, Simulink Coder can only generate C/C++ code from Simulink models. I don't know much about FORTRAN, but perhaps you can generate C code from your model and call it from a "wrapper" FORTRAN subroutine?
