what is property of an image?

When I use regionprops(), it returns the measurement of property of the image. What is the property here? color? something else?

By and large, the properties returned are usually numbers that describe each contiguous region in a binary mask.
It is also used to describe binary mask regions in relation to a grayscale image. i.e. given a circle in binary mask, what is the average intensity in a corresponding grayscale image.
Some "properties" returned are arrays that represent the subregion corresponding to binary mask regions. These arrays are either the raw data, or modifications of the binary mask i.e. ConvexHull.

It depends on what you asked it to measure. Look at the input argument list. You can ask it to measure certain things, or "all" things. If you didn't specify any measurements, then you'll get what it considers to be included in the "All" definition. See the regionprops() documentation for a list of things it can measure.
