How to create a circular plane in a 3D data

I have 3D data [X Y Z] of a variable S. I would like to create a circular slice of radius R, having origin at Xi Yi Zi, and oriented at an angle of 30 degrees to the X axis.
I would like to visualize and get the data of S on this circular plane.
Any help is greatly appreciated.
