General Q: How many instances would work perfectly on our machine?

Hello,
I wonder how many instances would work without any problems on our new machine, as I want to run a code over the weekend. Kindly note that I am working with version 2013a.
PC specifications:
Model: Dell Precision T5600 with Windows 7 Professional 64 bits
Processor: Intel Xeon CPU E5-2609 0 @ 2.40GHz 2.40 GHz
Ram: 64 GB
Please note also that I am running one instance currently and the process is preserving ~560 MB of memory, but it can go a little bit more.

I'll generally run up to 3 instances of MATLAB on a quad core machine. Having one fewer instance of MATLAB than cores allows me to use the machine while things are running.

Many thanks- According to Intel, it has 4 cores. So I assume running 3 simultaneously should be okay.
