How to make an grayscale image stay color ?

I work with dual energy radiology. This technic provides the human body figure with 4 different shades of gray (muscle mass, bone mass, fat mass, and background color), would identify each layer with a different color, but I'm not getting.
I am a beginner in Matlab.

Your answer is far from clear. First of all, the very statement of your question is paradoxical and confusing.
I understand that you want to color-code an image to reveal different things like bone or muscles. Unless you provide information as to on what basis you do color-coding and what problems are you facing in that, it is not possible to help you.
