How to plot a 3-D matrix?

I understand that I can use isosurface to visualise a 3D matrix. In the Matlab example,
isosurface(x,y,z,v,-3)
what is "-3"? Also, if my matrix elements are in the range [0, 30], can I specify that the 3D plot with grid-point <20 being transparent? Thank you, Kyle~
