How can I have a range for my colorbar, while also assigning a specific color to a specific value?

Lets say I have a matrix that contains values from 0 to 1000. I want 1 to 1000 to have a rainbow colorbar (jet), and I want all zeros to be black. Any help would be highly appreciated. Thanks
