The MATLAB Installation Guide for MAC OS X states on page 4-4 under the Known Problems and Limitations section that "You cannot run MATLAB remotely".
Normal MATLAB operation requires a Java virtual machine in order to display the IDE (command window, command history, etc.). Java on Mac OS X is implemented using native Aqua, not X-Windows. Native Aqua is not retargetable; that is, you can't tell Aqua to display to another Macintosh's console, only to the local console. Of course, Aqua is not X-Windows, so you certainly can't tell it to display to another X-Windows console (such as Linux or Solaris).
