There are number of different levels of modeling that can happen. The physics depends upon the rigidity of the framework, upon the sounding-board mechanism, upon the number of strings and their tuning, and other factors.

Violins have been studied relatively comprehensively; see here for some of the modeling.

An example of the variety of plucked instruments can be seen by examining this instrument list. Although it lists the Erhu as a bowed instrument, I have had the pleasure of twice watching George Goa perform on it; at times he uses it in a plucked mode. The instrument can be interactively tuned by stressing the neck to alter its range.
