I recently installed Leopard and upgraded to 10.5.1, on
an iMac (2.16 GHz Intel Core 2 Duo), then installed
Matlab R2007b, and Matlab runs just fine.
I had a problem with printing Matlab graphics which was solved
(see other thread on this list).

Are you using 10.5.1?
