On further note:

Did you guys MANUALLY create your Matlab dock icon,
or drag the one in /Applications/MATLAB_R2007b/bin/maci/MATLAB.app
onto the dock?

When I drag&drop the "Matlab 7.5" icon from
/Applications/MATLAB_R2007b/MATLAB 7.5,
it resolves to the "StartMatlab" script and everything works fine...
