I came across this thread tonight while searching for a
solution to the very same problem - brand new Macbook,
10.5.1 preinstalled, brand new installation of Matlab 7.5. 
This thread didn't fix the problem (obviously), but I came
across a workaround elsewhere:  Open X11 first, then open
the Matlab icon referenced above.  It seems to work so far.
 Any idea why this is and how to just make it work like it
should?
