This can easily be done at the Java level, though. First download the FindJObj utility from the File Exchange, and then:

hEditbox = uicontrol('style','edit',...);
jEditbox = findjobj(hEditbox);
jEditbox.setBorder([]);   % or: set(jEditbox,'Border',[])
