I would like to approximate two dimnesional data , z=f(x,y) in
matlab,
not through a polynomial,

well, as it stands, this is a meaningless question: you
don't show anything of anything (data? model? ...)...
anyhow, if you just want to mindlessly produce a <nice>
surface from your data, look at

     help griddata;

-and- <john d'errico>'s seminal FEX contribution
