I have so far used print -depsc <file> to export
figures. This gives nice eps files, that can be
imported an manipulated in Illustrator as vector
graphics objects.

However, pcolor, surf and other types of plots don't
export to vector graphics. Does someone know how to
export this as vector graphics ?

I'm running the latest version of Matlab on Mac OS X
10.4.10.

I am working on the same configuration as you are. For
printing a faster renderer is selected when graphics become
complicated. These faster renderers output in bitmap format.
When exporting to a vector graphics format, use the
'-painters' renderer, to prevent seeing bitmap data in
vector graphics format.
