Any idea where I can find and edit the Callback for the
'maximize' button in the title bar of a GUI ?
(Basically what I want to do is that the GUI appear in a
Maximized size as soon as it starts up.)

There are a few submissions on the Mathworks File Exchange
that do this. Search for 'maximized' and variants. The best
ones use undocumented Java hooks, but work pretty well in
practice.

Or you could use the resizeFcn callback of the main figure window
(usually named figure1).
