Does "display output" refer to the Display block in Simulink? If so, you can
connect the same signal to the To Workspace block so the data shown on the
Display block will also be captured in a variable in the MATLAB workspace.

If you're talking about Command Window output, then maybe the DIARY command will
suit your needs.
