How can I run 2 different functions on the same machine simultaneously?

I am recording some sound from a microphone while datalogging something related from the serial port while the sound is being recorded.

Can the parallel computing toolbox be used for this? and if so, how? I have used the toolbox before but only for splitting a single function across processors.
