I am trying to incorporate xlswrite into a for-loop, but I don't know how (or even if there is a way) to write to either different sheets, or better yet to append onto itself with each loop.

xlswrite can write data to only one sheet, so you cannot chose
different sheet at all.

You can write to a number of worksheets within a single spreadsheet - see help on xlswrite. You can also append info to an existing sheet if you index the cells appropriately.
