Is there a way to get the equations that the Curve Fitting Toolbox generates from data supplied from the user in an automated way?

That depends on what you mean by "an automated way".

If you're using the Curve Fitting Toolbox GUI and you want to extract this
information to a variable that you can access at the prompt, use the Export
To Workspace button below the Table of Fits on the Fitting window.

If you want to fit an equation at the command line so you don't have to open
the Curve Fitting Toolbox GUI, you can use the command line interface.

If you want to "experiment" in the GUI but then work programmatically,
generate an M-file from the GUI.
