i need help writing an mfile that interpolates wind tunnel data based on angle of attack, sideslip andgles and speeds.

That's sorta' like a homework question (not that it sounds like homework
but it's the "do my work for me" kinda'-sounding thing.

Give it a shot and when you have an actual Matlab-y question, then
you'll get quite a lot of help. As posed, it's so general as to be
impossible to provide any useful answers other than type

lookfor interp

at the keyboard and see what looks interesting and potentially useful.
