Consider using the Latex interpreter when labeling the axis:

xlabel('\^{p} Pressure', 'Interpreter', 'Latex')

If the symbol represents a mathematical entity then it should probably
be in italics in which case use

  xlabel('$\hat{p}$','Interpreter','latex')
