Once your matrix is in binary I mean in 0 and 1. Then you can never get a gray matrix. Beacuse by binary it means two values whether it is 0 and 255, 0 and 10. No function can generate a gray matrix from a binary matrix but the reverse is possible, i.e., generation of binary matrix from a gray matrix is possible.

Well you COULD by increasing your sampling density and interpolating... But I agree, the OP's problem is unexplained and ill-posed at this point.

Oh?

grayMatrix = cat3(binaryMatrix, binaryMatrix, binaryMatrix);

will give you a greyscale matrix whose shades are exactly the same as the
binary matrix.

Black and white are both shades of gray.
