Just stumbled across this almost 1 month after it was posted. I had a problem connecting Matlab to Access recently. As it turns out, My version of Matlab is 64-bit and my version of Access is 32-bit; this will NEVER work. Check to see if your version of Matlab is 64-bit or 32-bit. See if your version of Access is the same. If it is, this should be a pretty simple process:
http://www.tristanfletcher.co.uk/Matlab%20Access.pdf
http://www.mathworks.com/help/database/ug/database.html
http://www.mathworks.com/matlabcentral/newsreader/view_thread/277424

If they are different (32-bit vs. 64-bit), you're just out of luck.
