Is there a way of plotting an ellipse in an image which can then be deformed to fit a shape in the image?

If this were my problem I would:
1) write down the equation of an ellipse in 3-d (simple)
2) perform a non-linear least squares fit of this equation to my data.
3) plot the fitted ellipse

There are problems that make the non-linear fit fairly easy.
