can someone help me with this?

I'm trying to create an interface with the gui MATLAB 2015a, but I'm getting an error from the command window that " Undefined function or variable "frame". Error in ForTA>test_mfcc_Callback (line 304) rata_frame=mean(frames);
when i press push button "test mfcc", i can't get value for pre-emphasis to coefficen cepstrum. due to error in line 304

Undefined function or variable "frame". Error in ForTA>test_mfcc_Callback (line 304) rata_frame=mean(frames);
is the error message? Because no where is there frame just frames. Looking at your code though

what is the intent with the above? Note how frame is overwritten on each iteration of your loop, whereas the comment seems to indicate that it will "hold indivdual frames". I suspect that this is incorrect but am not sure what you intend to do here. Should frame be an array of frames? Was this what you had earlier? Perhaps something like
noFrame=floor(1/FrameStep); %Maximum no of frames in speech sample
frames = zeros(1,noFrame)
for i=1:noFrame
frames(i) = y2((i-1)*FrameStep+1:(i-1)*FrameStep+N); %Holds individual frames
end
ata_frame=mean(frames);
Note also how you add the frame to the handles structure. If you don't do guidata(hObject, handles) then this updated structure won't be saved (and you will lose this frame field).
