I have the same issue, I was using Kinect for Xbox 360 with matlab R2014b and it worked perfectly but as soon as I got R2015b the depth sensor stopped working and I´ve been reading alot that Kinect for XBOX 360 is not supported. What I suggest is to downgrade again to the 2014 version in hopes that it works again.

Is there a way to make the matlab read the Kinect Xbox 360 as if it is a Kinect for windows v1 ?

Maybe; see the route the user took in http://www.mathworks.com/matlabcentral/answers/312961-kinect-xbox-360-on-matlab-r2016b but note that they have not managed to get it working yet.
