Please go into some detail.
What data do you have?
What sort of operations do you want to do with them?

In a modern company of any respectable size, you need to be able to track inventory in real time, with access from multiple locations, possibly with automated sensors, GPS tracking of robots, and so on.
MATLAB is not designed for those kinds of high throughput multi-access multi-input situations. It would be unlikely that you would use it for the application you are suggesting.
On the other hand, MATLAB might be suitable for writing a prototype application, to allow you to test out various features and designs and input screens and so on. Figuring out what a program needs to do, and what it should look like is a lot of work, and MATLAB can be useful for that. And then afterwards you would typically take the lessons learned from the prototype and re-implement in a design suitable for higher volume and high reliability.

SimEvents can be used to model warehouses and along with the Global/Optimization Toolbox optimize parameters. Like you said, this would be on the design end.
