Set UTM projection to undefined projected vector

Hi there, I am new in Matlab and I need some help. I have a matrix(3500*7000) for the US area, which has not any projection. I know the latitude and longitude of this matrix(girded rater). How can I set a projection to my matrix? Any help is appreciated.
