Capturing heart rate from USB ANT+ dongle and chest strap has been discussed here:
Darren Hagues (SAP UK) Virtual Power allows a live-stream of ANT+ sensor data from an ANT+ stick to LINUX.
Is there an example how to run Darren Hagues Virtual Power in Matlab?

There is a Rasperri ANT project which sends data to a MQTT-Broker:
and Matlab supports MQTT:
In theory, it should be possible to stream ANT+ sensor data over a Rasperri ANT+ project to Matlab. This is probably a better accepted solution than a Linux solution.

I also recommend the blog of https://johannesbader.ch/«Track Your Heartrate on Raspberry Pi with Ant+»
Johannes Bader, former PhD student of the Swiss Federal Institute of Technology
who published many papers:
who used the Rasperri Pi. Now the Rasperri Pi can be modified to serve as a data grabber to stream ANT+ sensor data to Matlab

Store your ANT+ sensor data directly in the InfuxDataBase with the MATLAB client library for interacting with InfluxDB:
