Plotting data from a 11 by 3 by 1399 matrix

Attached is the file containing the matrix. I need to plot two separate graphs by extracting the data. One is the 1st column against the 2nd column. And the other is the 2nd column against the 3rd column.

When you have a 3-D solid rectangular block of data, exactly what do you consider a column to be? To get a vertical column, you'd have to specify what row and what column, and then you could extract all Z values in the column running vertically down the block at that (row, column) location. As you've stated it, it's not clear what you consider the first column and what you consider the second column. If you just specify 1, 2, or 3 as the second index, you'll get a 2-D slice through the rectangular block of data.
