make a 3D plot using science data

Hello, everyone¡
I'm trying to make a 3D plot using the variables latitude, longitude and air temperature. The way how I measure air temperature was using a globe (with a pressure and temperature sensor), so, I have a lot of air profiles starting from the bottom to 100-150 meters above the surface. (fill all the profiles with nans, in this way all the vector have the same length)
I thought, at first, make a 3d matrix with the coordinates , and then, assing to each coordinates the profile, but, I don't know how to do that.
I really appreciate your help.
