How can I convert a multiplicative speckle noise into additive noise without using log operator in MATLAB?

I am working on SAR image despeckling. The mean of log transformed noise does not equal to zero and thus requires correction to avoid extra distortion in the restored image. Can I do it without taking log operator?

If the mean of the actual data is 1, then the mean of the log of that data would probably be pretty close to 0. So can't you just divide your data by the mean of the data?
