Possible to record audio and video at the same time as running functions?

I have a program that others will use and I need to monitor them using a webcam and a microphone (logitech USB devices). I need to start recording when the person begins the matlab code and to stop recording after a lot of code has been run. How can I start a recording, run a lot of code, stop recording, and save the recording? I mainly need help with video.
I have the image acquisition toolbox and the Computer vision system toolbox.

My program is being compiled as a .exe. Could I compile the video recording as another .exe and run it at the same time?
