Text in eps figures incorrectly spaced

The text in this image is correctly typeset.
Today I reran the same script to produce it and got the following
As you can see the text is no longer correctly spaced. Does anyone know why there is a difference? The scripts are identical. Thanks in advance.

I guess the difference is that the x- and y-axis labels are no longer centred. Are you sure that there has been no extra whitespace added to these labels? Does the offset happen before or after you have saved the figure to file?
Not only are they not centred but there are now gaps between the characters. The same problem occurs in the legend. The offset occurs before I save the figure. This problem is happening to all of my figures now...
What is the code that you are using to generate the figures?

I reinstalled Matlab and it is working normally now. In fact I'm running it on a virtual machine (on my mac) so I reinstalled that also.
