Extract X, Y and Z data from contour plot in JPEG format.

Hello,

I am trying to extract X, Y, Z data from an engine BSFC contour plot. Is there any function or tool that can help me in extracting the data? I have attached an example of BSFC contour plot which I am trying to extract the data from.

if use figure，i thinke may be use graphic handle to extract xdata and ydata
