DIY build Computer to Support Matlab

My lab is moving and we are going to need a new computer to support our Matlab install. We are an academic/research lab with all the toolboxes. I mostly use the IP and statistics toolboxes as much of the work is image analysis. Looking for tips on spec's for the new computer. Because I work with large files - over 4 GB 3D stacks I already know I need 32GB memory; but is there advantage to going to a server CPU as opposed to a workstation one? I'm looking to go to a dual monitor set up so I have both code and image displayed; any GPU's I should favor? I'm looking to build it myself simply to have the flexibility in choosing memory and storage (SSD for OS, programs and work files, spinning disk for archiving the work files and results) and wish to know if others have gone this route.
