Heat Transfer

Hello,I need a simulation/formula of heat transfer for a brick bread oven. I want to know the amount of actual heat require for breads to bake. I am experience user of matlab and simulik. But i don't have much knowledge of thermodynamics; I have my background in Electronic and software engineering. I will be happy if I receive more information about my request.Thanks
