If you want to change the default web browser used when you invoke web() inside MATLAB, then that is possible.
However, if you want to run MATLAB on the Google Chrome Operating System, then you cannot do that, not even with the Production Server that Image Analyst mentioned. At this time, MATLAB can run only on MS Windows, OS-X, or Linux, and all products such as MATLAB Compiler and MATLAB Compiler SDK and MATLAB Production server are supported only on those operating systems.
